Winemaking: Direct pressing with stainless steel pneumatic press followed by a static cold settling in stainless steel tanks (10 ° C for 24 hours). Fermentation in barrels (30% new oak from central France), aging on lees with stirring for 8 to 10 months.Ultramodern bottling under inert gas, without sticking a light filtration if the vintage requires.
