VINEYARD
Close to Toulouse, the vineyards of Fronton, spreads across vast terraces, situated between the Garonne and Tarn rivers, as you leave the town via the right bank.

TERROIR
The presence of iron and quartz in this poor and gravelly soil brings out characteristics specific to the Négrette grape variety : aromas of violet and berries (black berry, cherry and black currant). A genuine, unique wine, boasting its terroir of origin.

GRAPE VARIETIES
65% Négrette, 15% Cabernet Sauvignon, 10% Syrah, 5% Gamay, 5% Cabernet Franc.

The unique Négrette variety appeared during the 12th century under the name, "Mavro" (black in Greek), when it was brought back from Cyprus by the knights of the order of Saint-Jean of Jerusalem. Capricious, it only acclimatised to the terroir of Fronton; Négrette is one of the few varieties producing wines with the same aromas as those expressed when tasting the ripened fruit.

WINEMAKING
Early-morning harvesting during the coolest hours of the day especially this vintage. The grapes are destemmed, slightly crushed, and then pressed in a closed pneumatic press in view of extracting must and the harvest’s best qualities. The musts are maintained inert during the entire winemaking process, thereby skilfully protecting them from oxidation. The various grape varieties are vinified separately. The clarified must slowly ferments for 3 weeks in thermoregulated vats at a temperature of 16-17°C. Once fermentation is completed, the wine is stirred and matured on fine lees for several weeks. After blended, it is clarified and stabilised before bottling.

TASTING NOTES
Pink clear raspberry in color. Fresh and intense on the nose with citrus fruit and strawberry notes. In the mouth round, balanced and suave, supported by fruity acidity especially grapefruit. A long finish lightly spiced. If carefully stocked can be aged for up to 2 years.

PAIRING
Goat cheese pie, salmon rillettes, chicken with apricots, refined tajine, fruit-based desserts (bavarois, peach or prune pie).

SERVING TEMPERATURE 46.4°F
