Vinification
Between 45 to 60 hl ha (2,2 acres) mostly harvested manually. The vinification is done, on lees (sur lies) in concrete and stainless steel vats. As all Muscadet Sèvre et Maine sur Lie, Château du Poyet keeps its wine on lees all over the winter and cannot bottle them before the 3rd Thursday of March. The slight residues of carbon dioxide which remain after fermentation give Château du Poyet its particular freshness and special liveliness on the palate , that we often refer to the « pearls of youth.

Château du Poyet Muscadet has nice clear yellow tints. A nose which is light and fruity with minerality. In mouth it is full bodied with very long mineral taste showing the very good balance between old vines and a very strong terroir.

Tasting Notes
It is a well structured wine with very good length in mouth. Full and fat. Château du Poyet with shellfish is a classic combination. It is super with raw oysters. It is wonderful with (and in) mussels "à la marinière" and mussel soup with saffron, and with a simple grill fish.
