TERROIR AND VINEYARDS
Vineyards Planted in 1975, 1986, 1997. Facing southwest and southeast. Altitude 320 meters above sea level, Soil Dates back to the Pliocene Age, marine origin, rich in fossils, shells and oysters. Pruning Spurred cord, with 10-14 buds per vine. Vintage 2011 Denomination Umbria IGT Grapes Sangiovese 45%, Montepulciano 20%, and Syrah 35% Number of Bottles 20.000 bottles First vintage 1978 Alcohol 14% vol. Total Acidity 5.4 g/l. VINIFICATION AND REFINING
Harvest Hand picked, in small cases from August 25th to Sept 10th 2011, depending on the grape variety. Production 5,000 kg of grapes per hectare. Vinification The grapes are first cooled and then pressed very softly. The grapes yield in must is 61%. Fermentation and Maceration In stainless steel vats at 24°-28°C (75°-82° F) for 12-15 days. Maceration is 7-14 days long. Refining One third of the grapes are refined in French oak for 12 months. After an intense blending session, the wine is refined in bottle for 6 months before release.
